Cioccolato di Modica

 

Modica chocolate makers keep to the same techniques which were brought to Sicily by the Spanish in the 1600's, who had witnessed the Aztecs making chocolate in what is now Mexico. The cocoa and sugar are mixed together at low temperatures so that the sugar does not melt. This makes for a granular consistency alongside a strong intense cocoa flavour. These elements are usually lost when mixed at higher heat.
